This is what my place of work looks like..
..it's full of surgeons :-) One of the doctors and his medical assistant are retiring this week. The two of them at the same time after having worked together for over 26 years. If that doesn't call for cake I don't know what does. All the best to you both on this new stage in life.
The other reason to celebrate was the birthday of a great boss. They are really hard to find and I'm very grateful to have one. I wish you only the very best.
"Under the surgeons" are two chocolate cakes filled with Ganache. They are very good to work with as they hold a lot of weight.
Inside the suitcase is a custard slice cake. This one is a little trickier as cream and sugar paste don't get on with each other. The custard slices were therefore covered with white chocolate Ganache.
Ganache is quick and easy to make. All you need is cream and chocolate. Heat the cream up in a big saucepan and add the chocolate while stirring constantly until all the chocolate has melted.
Dark chocolate: 2 parts of dark chocolate to 1 part of cream
White chocolate: 3 parts of white chocolate to 1 part of cream
The very best of luck!
