Easy peasy eggy brekkie



This is an extremely quick recipe, which was in a lovely German magazine called "Lecker".


It has since become a firm favourite in our house when it comes to a lazy Sunday morning breakfast. It would also make a nice starter, if you pair it up with a salad.


For 2 people all you need is:


  • 4 pieces of sliced pan
  • A little butter
  • 4 small eggs
  • 4 slices of ham
  • salt & pepper
  • a muffin tray                             

          (mustard, chives)









Grab a rolling pin to thin out your bread. Butter the bread (if you like you could also add a little bit of mustard) and form nests with your hands. Put them into the greased muffin tray. Add the ham and one egg to each one. Season with salt & pepper and also some chives if you like.


Bake at 200°C for about 15 - 20 mins or according to how hard you like your eggs. Done!


Small eggs work best here, as bigger ones can cause an overflow. This easy peasy brekkie could

also be transformed into a vegetarian version with mushrooms, tomatoes or aspargus.


It's yummy, incredibly quick and easy to make. Just what you need on a Sunday morning.
