Birthday Cake

 

 

 

 

..for my best friend! We met on the 1st day of Kindergarten and have been going strong ever since :-) All the best for you, and here's to many more birthdays to come.

 

For her special day I tried out a new recipe from a great German baking magazine. This cake has got a lovely orange and Amaretto flavour to it and can be filled with whatever you fancy. The recipe suggested a mocha filling but as she isn't a big fan of all things coffee flavoured, I grabbed the Baileys bottle instead. An orange mousse would work well too I think.

 

 

 

 

 

 

 

For the cake (without filling) you need:

 

  • 4 egg whites
  • pinch of salt

- Whisk until stiff

 

 

  • app. 4 tbsp warm water
  • 4 egg yolks
  • 120g sugar
  • zest of 1 organic orange

 

- Add the water to the egg yolks and beat till fluffy, adding the sugar as you go

  along. Keep beating until the mix turns light and a little thicker.

  Add the orange zest.

 

 

 

  • 75g flour
  • 40g cocoa powder

 

- Mix together.

 

  • Juice of 1 organic orange
  • 2 - 3 tbsp Amaretto

 

- Mix together

 

 

Gently layer the egg whites onto the egg yolk mix, sieve flour & cocoa powder on top.

Carefully fold in the egg yolks.

 

Baking: 180 °C app. 25 Min. (In a round greased cake tin, Ø 18-20 cm)

 

Leave your cake to cool before cutting into 2 layers. Trickle the Amaretto-orange mix onto the

layers to keep them moist.

 

Add a filling of your choice. Put the kettle on and ring your friends :-)
